Slow Roast Chicken

Cooking with ghee is glorious. Particularly roasting most proteins and tempering spices. I love the depth of flavour ghee adds to roast chicken and the pan drippings (emulsified with roast garlic and reduced chicken bone broth) make a delicious white gravy.

I’ve made a similar version with a whole chicken - a labour of love and if you’ve got an afternoon to spare, it’s certainly worth the time. Marylands or any dark meat on bone works great as well.

**Gluten free and refined sugar free.
