Mung Bean, Jalapeño and Zucchini Salad w Anchovy, Green Pepper and Roast Lemon Dressing
This is one of my favourite warm salads. It is delicious solo as a main or a side for whatever protein of choice.
Try and keep most of the ingredients around the same size to make the perfect bite.
Anchovies vary in potency, adjust to taste. Personally, I prefer Ortiz.
Forgot to add walnuts to the recipe. Chopped walnuts or almonds. Yum.
