Veggie Nabé in Dashi and Oat Milk Broth

Nabé or hotpot is a meal I cook at least once a week. Hence the TLC involved in creating a nourishing broth base.

Variations can be made with meat, tofu and seafood.

Vegetables. I could write an entire post about what vegetables don’t belong in certain Asian dishes. But I’ll keep this short, I would not put these vegetables in this nabé: capsicum, eggplant, broccoli, zucchini, portobello mushrooms, celery and tomato.

if you have breakfast radish on hand - peeled and cooked till tender to the fork in this is delicious. Cos lettuce is a great vessel for absorbing flavour/broths. Love it in a nabé.

Sub oat milk with whole or soy. When buying oat milk - read the ingredients as some will contain sugar etc. My pref is Minor Figures, Organic when available.
