This plate takes me back to my first morning in Thimpu, Bhutan. First time eating a masala omelette with a little altitude sickness lingering. But hey, the cascading mountains and breathtaking valleys eclipsed any feelings of mild nausea.

The omelette itself warms the tummy with tempered spices and savoury goodness. Yum. Open the windows and crank up the extractor when cooking this :)
