This is what works for me. Substitute with what works for you.
** when buying condiments, especially soy sauce or shoyu always check the list of ingredients. Proper shoyu/soy should contain only soybeans, wheat and salt. No colouring, sugar etc.

  • Fish Sauce (Megachef - MSG/Preservative/Gluten free)

  • Shoyu (Shoda Organic)

  • Mirin (Fukuraijun)

  • Cooking Sake (Fukuraijun)

  • Rice Vinegar (Roubai)

  • Aged Soy (Kamebishi)

  • Grapeseed Oil

  • Extra Virgin Olive Oil

  • Balsamic Vinegar

  • Ayam Brand Seasoning Sauce

  • Sesame Oil (Yamada Seiyu)

  • Tamarind Concentrate (Maharaja’s Choice)

  • Whole peppercorns (White, Black, Green)

  • Coriander Seed

  • Garam Masala

  • Turmeric

  • Dried Chillies (Arbol, Chile Morita, Birds Eye)

  • Sichuan Peppercorns

  • Tahini

  • Oat Milk

  • Kombu (Rishiri and/or Hidaka)

  • Katsuoboshi (Bonito Flakes)

  • Chicken Bone Broth (100% bone broth with no seasoning)

Homemade Condiments:
