Smoked Ocean Trout and Yuzu Sauce Gribiche Sandwich

If you’re time poor, skip this recipe :)

Starting off with a sauce gribiche - add Yuzu to this and boil the eggs a little longer for a firmer/chunkier texture to the sauce gribiche. The sandwich needs a thicker and chunkier sauce - no soggy bread.

Slice the cucumber (thin) and salt them for 20mins to draw out excess moisture - google this. I tend to make a batch out of this and use the green extra cucumber for a salad.

Cold smoked ocean trout - pref thick cut. Salmon is fine as a substitute - fish of choice, shellfish or poached chicken.

Bread - pref something soft in texture and not sweet, for this sandwich I had a fresh loaf of rye/grain sourdough. Yum.
