XO Noodles with Pork, Leek and Wood Ear Mushroom

A jar of XO sauce in the fridge creates a pretty delicious variety of meals.

This pork in this recipe can be subbed with chicken, seafood or firm tofu. Make a little extra for leftovers - the noodles soaking up all the XO sauce goodness overnight (fridge) makes such a glorious breakfast or brunch.

*Gluten free option - sub soy with Tamari.
