Spinach, Anchovy, Cheddar and Spicy Sausage Frittata

This is one of my favourite frittata recipes. It is quite dense because of the amount of spinach, full of flavour with the spicy sausage and hint of anchovy. It’s also a great way to clear out the fridge.

Just ensure the ingredients pair well together and excess moisture is removed from veggies to avoid a soggy frittata.

I find myself slicing into this through the day as a snack - it’s delicious and pretty nutritious, depending on the make up of the spicy sausage used.
