Pan Fried Marinated Quail

The smell of brown butter wafting through the kitchen is such a delight. I prefer cooking a butterflied quail in a pan rather than roasting in the oven - faster.

Made a similar version of the zucchini, red rice and pomegranate salad but opted for a yoghurt, chilli, lime and coriander dressing to pair with the quail. Plus a roughly diced banana shallot in the roasting pan.
