Like sambal belacan, there are various versions of Air Asam and each household prepares this differently.

I prefer using a non-tumis Sambal Belacan as the base of this recipe because there’s no oil and it adds a good amount of depth to the Air Asam.

Air Asam makes a great dipping sauce for any protein (grilled, baked, fried, steamed or poached). Like all good things, it’s balanced - savoury, salty, sour, spicy and if you’re not using in season ripe tomatoes - add a little coconut sugar to smooth out the flavours.
