Roast Hapuka Wing in Turmeric, Lime and Green Peppercorn Rempah

Hapuka wing is my favourite collar/wing because flavour and the meat to fat (+ gelatinous goodness) ratio is well balanced. It is also a fuss-free fish to cook in the oven, BBQ or grill.

Marinate the fish with the turmeric, lime and green peppercorn rempah (2 tbs per wing and 1/2 tsp grapeseed oil) for at least 30mins and no more than 3hrs. Marinade overdrive = macerated texture.

Roast the fish (bring it close to room temp first - out of fridge 15mins before cooking) in an oven preheated on max and reduced to 220 after a couple of mins of roasting. Approximately 15-20mins depending on your oven. Some intuitive cooking required here :) BBQ or Grill - even better.

Serve on top of Chickpea Salad with Chile Morita and Lime dressing. Same dressing used in this Warm Lentil Salad and fold into (hot) cooked chickpeas, 2 tsp chopped scallions and 1/3 cup diced Lebanese cucumber.
