Simmered Pork with Radish and Wood Ear Mushroom
Good white daikon can sometimes be hard to come by. I love peeled breakfast radishes as a substitute - absorb flavour and retain a pleasant sweetness. Yum. Love eating simmered pork with parboiled rice or buckwheat noodles with spicy sesame sauce. If you’re gluten tolerant, the best version of this is paired with pan mee (flat wheat noodles).
This dish can be made the night before as it keeps well and like most stews, taste better the day after. Pork can be subbed with lamb, beef, chicken - dark meat or shiitake mushrooms.
Depending where you based, pork can either be delicious or very gamey. Choose your butcher wisely :) In Melbourne, I like Hagens for belly, spare rib/soft bone, chops. Great Asia Food Store (Little Bourke) for ribs, bones (stock/soup) and belly.
