Mushroom Larb

Larb dressing is such a versatile sauce/dressing. The definition of balance varies from person to person - taste and adjust according to what your palate enjoys. I love using this dressing for salad variations, noodles, dipping sauce and fried rice.

Next to pork larb, my second favourite is mushroom. This works particularly well with oyster mushrooms because of it’s texture, mild taste which enables the mushroom to absorb other flavours. I think enoki mushrooms (don’t overcook this) can work in a larb but oyster mushrooms are my preference.
