Sambal Tomato Tumis Chicken and Eggplant

A batch of sambal belacan goes a long way. It is a great way to add flavour and heat to a stir fry. This is one of my favourites as the sweetness from tomatoes blended with the sambal is pretty freakin’ delicious.

If I have a batch of eggplant that needs cooking, I prefer to roast it all and add it in dishes. Personally, I prefer the taste of roasted eggplant. Otherwise, soak the (sliced) eggplant in salted water for 30mins and pat dry to remove excess liquid and bitterness.
